Meatballs in Vegetable Tomato Sauce

Ground beef, garlic and onion powder, red pepper flakes, kosher salt, black pepper, dried basil, Italian seasonings, one egg, squirt of ketchup
Form 2oz balls, sauté in non stick pan until brown on all sides, drain grease.
Sautéed in EVOO green pepper, bag of frozen pepper/onion medley, two cloves garlic, spinach chopped fine, cilantro chopped fine. Add cans of organic diced (or stewed) tomatoes. Add S&P, garlic power, and Italian seasoning to taste. Let simmer for an hour if time allows. Add a bag of frozen Italian vegetables at the end and serve!


Bone-In Ribeye Steak



Bone-In Ribeye Steak seasoned with steak seasoning, salt and pepper. Grilled for about 5 minutes each side. Served with vegetables and green salad.

Chicken Vegetable Soup


Chicken Vegetable Soup –
Two whole free-range chickens seasoned and simmered all day with rock salt, pepper, thyme, sage, rosemary, onion and garlic powder and chopped celery leaves. Picked out bones and put broth and meat into a huge stock pot with peas, cut green beans, onions, celery and carrots.


Wild Caught Sockeye Salmon


Wild Caught Sockeye Salmon – Drenched in lemon and pads of butter. Seasoned with steak seasoning, lemon pepper, onion powder, salt, pepper. Cooked in oven on broiler setting for about 8 minutes. Served with mixed green salad and mixed vegetables.

Elk Burger


Elk Burger

Ground elk season with onion powder, garlic powder, kosher salt and black pepper. Grilled for about five minutes each side. Served with lettuce, baby spinach, and sautéed peppers.

Pork Carnitas in Lettuce Cups


Pork Carnitas in Lettuce Cups

Pork shoulder roast (to fit in large crockpot)
2 t. Cumin
1/2 t. Cayenne pepper
2 T. Coarse salt
2 t. Black pepper
2 t. Oregano
2 t. Garlic powder
2 t. Onion powder
2 t. Chili powder
2-4 T. Lime juice/or juice of 2 limes

Place pork in crockpot and add approximately 2-3 cups water.
Spread the spices evenly over the pork. Drip lime juice over the pork. Low 10-12 hours. About two hours before, discard visible fat and bone. Stir meat with the liquid gently breaking up meat. Put on warm setting until ready to serve.
Serve with:
Lettuce cups
Sour cream
Fresh cilantro
Pico de gallo (seeded and chopped tomato, cilantro, red onion, jalapeño, green onion, S&P, lime)

Grilled Flank Steak


Grilled Flank Steak – Grass fed beef flank steak marinated in a splash of aminos, splash of apple cider vinegar, white pepper, black pepper, Kosher salt, powdered garlic salt, olive oil. Marinate in the fridge all day or overnight.

Meatballs – 1lb ground beef, 1 egg, ketchup, S&P, Italian seasoning, basil, onion & garlic powder. Form balls, sauté in skillet until browned on all sides (40 min).

Served with baby spinach salad, sautéed diced organic tomatoes, and mixed veggies sautéed in butter.

Spicy Chicken Legs


Spicy Chicken Legs – Cover legs in hot sauce and baked at 375 for 1hr 15min. Then turn broiler on high and keep turning legs over for additional 15 mins to make all sides crispy. Served with salad, cooked broccoli, and veggie sticks.

Roasted Whole Chicken


Roasted Whole Chicken –  Thawed a free-range, organic whole chicken. Put S&P, sage, and thyme inside cavity. Rub top with butter and more S&P, sage, and thyme. Add 2 inches of water to chicken in roasting pan and cover. Roast at 375 for 1.5 hours then flip chicken over, reduce heat to 325, and cook another hour.  Served with mixed greens salad and sweet peas.

Grass Fed Beef Shoulder Roast


Slow Cooker Beef Shoulder Roast –  Sear beef roast in pan. Put in slow cooker covered 2/3 with water. Add S&P, onion powder, and steak seasoning. Beef roast was frozen and cooked on low in slow cooker for 12 hours. Served with mixed greens, carrots and cauliflower.

Turkey Vegetable Soup

Turkey Vegetable Soup – Simmered the turkey carcass on Thanksgiving in water and S&P for 6-8 hours. Picked the bones out and stored the meat and broth in jars.
Put a jar of the turkey broth/meat in a soup pot and add a bunch of veggies.

Sockeye Salmon

Oven baked Wild Caught Sockeye Salmon seasoned with lemon, pepper and basil. Baked for about eight minutes on the low broil setting. Served with mixed green salad, broccoli, and carrots.
