Wild Colorado Elk Tenderloin marinated in aminos, lime juice, steak seasoning, onion powder coarse salt and ground pepper. Served with white rice, broccoli, and a mixed green salad.
Meatballs in Vegetable Tomato Sauce
Ground beef, garlic and onion powder, red pepper flakes, kosher salt, black pepper, dried basil, Italian seasonings, one egg, squirt of ketchup
Form 2oz balls, sauté in non stick pan until brown on all sides, drain grease.
Sautéed in EVOO green pepper, bag of frozen pepper/onion medley, two cloves garlic, spinach chopped fine, cilantro chopped fine. Add cans of organic diced (or stewed) tomatoes. Add S&P, garlic power, and Italian seasoning to taste. Let simmer for an hour if time allows. Add a bag of frozen Italian vegetables at the end and serve!
Pork Carnitas in Lettuce Cups
Pork shoulder roast (to fit in large crockpot)
2 t. Cumin
1/2 t. Cayenne pepper…
2 T. Coarse salt
2 t. Black pepper
2 t. Oregano
2 t. Garlic powder
2 t. Onion powder
2 t. Chili powder
2-4 T. Lime juice/or juice of 2 limes
Place pork in crockpot and add approximately 2-3 cups water.
Spread the spices evenly over the pork. Drip lime juice over the pork. Low 10-12 hours. About two hours before, discard visible fat and bone. Stir meat with the liquid gently breaking up meat. Put on warm setting until ready to serve.
Pico de gallo (seeded and chopped tomato, cilantro, red onion, jalapeño, green onion, S&P, lime)
Grilled Flank Steak – Grass fed beef flank steak marinated in a splash of aminos, splash of apple cider vinegar, white pepper, black pepper, Kosher salt, powdered garlic salt, olive oil. Marinate in the fridge all day or overnight.
Meatballs – 1lb ground beef, 1 egg, ketchup, S&P, Italian seasoning, basil, onion & garlic powder. Form balls, sauté in skillet until browned on all sides (40 min).
Served with baby spinach salad, sautéed diced organic tomatoes, and mixed veggies sautéed in butter.
Roasted Whole Chicken – Thawed a free-range, organic whole chicken. Put S&P, sage, and thyme inside cavity. Rub top with butter and more S&P, sage, and thyme. Add 2 inches of water to chicken in roasting pan and cover. Roast at 375 for 1.5 hours then flip chicken over, reduce heat to 325, and cook another hour. Served with mixed greens salad and sweet peas.
